Shrimp Ceviche Tostadas





Recipe Ingredients:

1 lb. Cooked detailed, peeled & deveined shrimp diced
(I prefer to have the ready to eat shrimp then "cook" in lime ;))
5-7 De seeded Roma diced tomatoes
2-3 Cucumbers diced
1/2 Chopped/diced white onion
1/4 C. Chopped fresh cilantro
1 Avocado sliced for top of tostada
2 Limes juiced
1 Lime cut for serving with tostada
Corn tortillas
Oil to fry tortillas
Sprinkle of Lawry's Garlic Salt

Combine shrimp, tomatoes, onion, cucumber, cilantro, and lime juice in medium bowl with a sprinkle of Lawry's Garlic Salt; cover. (May be prepared ahead and refrigerated.)

Fry corn tortillas while the mix is marinating, you can fry as many as you like, as the recipe above should make enough for your family.

Also you can adjust this recipe by adding crema to the bottom of the shell and adding crab meat along with a el pato style base. Make a side of beans to have bean tostadas with avocado and white Ranchero Mexican cheese.

Once your tortillas are fried, place a spoon full of the ceviche on the tostada topping with avocado slices and a lime wedge. Drizzle your favorite chile(Tapatio, Valentina, Cholula) over the top to spice up your tostada.

Bike Rides and Sunshine



We took Noah to see Spy Kids 4D today, he really enjoyed it, even though the 4D part was a scratch and sniff card; He had a lot of fun after pretending we were spies. We didn't have a lot of time after the movie to spend together before Gabe had to go to work, so Gabe went for a run and Noah and I tagged along to ride his bike and enjoy the sunshine. Down to the play field we went with his bike, helmet and spy kid kit (his back pack) it was such a hot day! We had a good time, I've included a couple photos from the night before in his new Spiderman costume, he really gets in character as you can see in the photos...Enjoy!

95 years old and still has a grip on all the ladies...



I was invited to share in Gabes Great Uncle's 95th birthday party... 95 years old and the man is out, in a 110 degrees dancing to the Mariachi music, not missing a beat. He was roping in the ladies to dance with him, once he grabbed hold, you were his for the remainder of the canción. It was such a nice afternoon, I heard a love song start to play and the expression in Gabes Grandma's face looked so enamored, that I asked if she shared this song with her husband and she said yes, it was their song. It's amazing what a song can hold for two people, it brings her a memory of her husband and the time they shared together,and though her husband has passed, she will have little reminders like this love song to touch her heart again. I enjoyed the afternoon of dancing, laughter, good food and great company as it ended; I am reminded of how lucky I am to have such amazing people in my life. Thanks again Jesse for inviting me to meet your family, they are all so kind and welcoming, now I see where you get it from ♥


























A little visit from Noahbug ♥


Although Noah is only gone for two months, we felt a mid summers visit was in order. We sure miss him, seeing him for a couple days really helped. We had a rough start, but after the little snag, we were able to work through and enjoy the weekend with the family. Xona is a little resort style staycation we found a couple years ago, they always offer the best rates. Every time we go, I feel like we are the only ones there, it's nice when your with a large group. That evening we introduced Grimaldi's Pizzeria to everyone, I think they have the best pizza and salad by far in the Valley. Grimaldi's also has a great atmosphere and you can't beat the price; Plus on your birthday, if you sign up on their website, you get a free large pizza. After dinner we took a walk around the Scottsdale Quarters, a nice place to enjoy the evening and some shopping. It was so nice to spend the weekend together, we had such a great time, Noah is so blessed to have such an amazing family that loves him... to the moon and back ♥
